Belgian waffles are known for their fluffy texture, but did you know there’s more than one type of Belgian waffle? Originally, both Liège and Brussels waffles were the most popular varieties. Today, in our home, gluten-free waffles are gaining more and more popularity.
A Brief History of Waffles
Waffles have an ancient history dating back to the Greeks, who made “obelios”—a dough cooked between two metal plates. In Medieval Europe, similar practices evolved, and by the 13th century, bakers were using iron molds with intricate designs to create patterned treats that laid the groundwork for modern waffles.
But Belgium is where the waffles we know today were perfected. Bakers in Liège were the pioneers of the denser, sweet waffle made from yeast-based dough. These Liège waffles are rich and chewy, with pearled sugar creating a caramelized, crispy outer layer while keeping the inside soft.
Brussels waffles, on the other hand, are lighter and fluffier, usually made with baking powder instead of yeast. These waffles are thicker, and they gained international fame after being showcased at the 1964 World’s Fair in New York City.
Gluten-Free Waffles in Modern Kitchens
The invention of waffle irons in the 20th century made preparing these delicious treats much easier, allowing people worldwide to enjoy them at home. In the U.S. and Canada, waffles are often served with fruits, ice cream, or maple syrup for breakfast. My recipe, however, is gluten-free, and I’ve eliminated sugar from the batter for a versatile, not-too-sweet base. You can always add some syrup or sweetener if you like!
Why Are Fluffy Waffles So Popular?
Belgian waffles have become a symbol of celebration and indulgence. And gluten-free, dairy-free versions continue this tradition for those with dietary restrictions. Their airy texture, with a crisp exterior and soft interior, makes them perfect for pairing with a variety of toppings, from chocolate and fresh berries to whipped cream or caramel.
The beauty of these gluten-free waffles is their adaptability. You can customize the recipe to suit your preferences, making them a favorite breakfast or dessert for families worldwide.
