Hello, I’m Maria, and my gluten-free and dairy-free journey began five years ago when I was diagnosed with thyroid issues. I’ve always been passionate about baking and cooking, especially bread and cookies. But with hypothyroidism, digestive issues are common, and gluten was no longer an option for me. This wasn’t just about cutting out bread and pastries—I had to learn how to read labels, understand ingredient lists, and figure out where gluten might hide in everyday products.
Social outings became tricky when I also had to eliminate dairy from my diet. Eating out at restaurants, cafes, and bars required constant adjustments and careful menu planning. But despite these challenges, the joy of creating delicious, gluten-free alternatives at home has been incredibly rewarding.
Why I Don’t Use Ready-Made Flour Mixes
One of the core principles in my kitchen is avoiding ready-made gluten-free flour mixes. These mixes often contain multiple thickeners and preservatives, which can cause digestive discomfort, especially for people with sensitive stomachs. I believe that gluten-free baking should be simple and adaptable, allowing you to recreate my recipes with the ingredients you have on hand, wherever you are in the world.
That’s why I carefully select my flours and make my own blends. For example, I avoid rice flour, which is common in many gluten-free mixes, and instead opt for more nutritious options like sorghum, buckwheat, and chickpea flour. Depending on the recipe, I might add coconut flour for texture and flavor.
As for starches, I rely on tapioca starch. And rather than using synthetic thickeners like xanthan gum or guar gum, which are known to irritate the digestive system, I use natural alternatives such as chia seeds, flaxseeds, and psyllium husk. These not only act as binders but also add valuable fiber to the recipes.

Adaptable Recipes for Global Use
The beauty of my approach is that the ingredients I use are easily adaptable. You can swap the flours and starches I recommend with local alternatives available in your region. This makes my recipes flexible and accessible to people from all over the world, regardless of what gluten-free products are sold in your local stores.
My goal is to create recipes that work for a variety of dietary needs. Whether you’re dealing with gluten intolerance, avoiding dairy, or simply looking for healthier options, my recipes are designed to be versatile. Most of them can easily be adapted for vegans and those with other allergies.
Beyond Gluten: The Dairy-Free Challenge
In addition to gluten, I’ve had to eliminate dairy from my diet. But this hasn’t stopped me from enjoying creamy textures in my cooking. Depending on the recipe, I replace milk with homemade cashew milk, plant-based yogurts, or even fruit juices. Apple juice, for example, works beautifully in crepes, adding a subtle sweetness that’s perfect for breakfast or dessert. I also substitute oils with homemade applesauce, giving baked goods a moist and tender crumb.
Traveling Gluten-Free and Dairy-Free
Traveling with dietary restrictions can be challenging, but I’ve developed a few tricks along the way. Not every country offers gluten-free or dairy-free options, so I often bring my own bread when I travel. It keeps well in the fridge for about a week, making it perfect for shorter trips. For longer travels, I research local stores and look up the recipes of the cuisine in the country I’m visiting to understand what dishes I can safely enjoy at cafes or restaurants.
Despite the challenges, following a gluten-free and dairy-free diet has dramatically improved my health. Many of the issues I struggled with have either disappeared or become more manageable, and I’m grateful for the positive changes this lifestyle has brought.
